Vanilla egg custard flan- French style recipe

Vanilla egg custard flan is a very simple dessert which makes a great tea-time snack.It can also be made with other flavourings but let’s first concentrate on a great vanilla taste.


Recipe for 6 people


Ingredients from Mondizen

1 vanilla pod


Ingredients from your kitchen

6 eggs

1 L-2 pints milk

160g-6oz caster sugar




Pre-heat the oven 150°C. 

Heat the milk and sugar in a saucepan. Split the vanilla pod down the middle and scrape off the seeds with a sharp knife. Put the seeds and vanilla pod into the milk.

When the milk is hot take it off the heat and leave it to cool. 

Beat the 6 eggs in a mixing bowl. Mix in the warm milk gently, and then stir well to obtain a smooth mixture. 

Pour the mixture into a flan tin (or patty tins). 

Cook bain-marie style in the oven for 45 minutes (for 30 minutes if you chose patty tins).

To check if your flan is ready stick a clean knife into the centre if the blade is clean, then your flan is ready, if not, cook it for a few more minutes.


Leave to chill in the fridge.
