Ingredients for 6 servings
1 bag Alsa vanilla sugar
150 g (5 ½ oz) Nestlé baking chocolate
Icing sugar to dust (optional)
25 g (1 oz) plain flour
125 g (4 ½ oz) unsalted butter
200 g (7 oz) caster sugar
50 g (2 oz) ground almonds
50 ml (2 fl oz) water
Preheat the oven at 180°C.
Grease and line an 18cm (7-inch) loose-bottomed cake in.
Whisk together the eggs, sugar and vanilla sugar for 2 minutes, until very light and fluffy.
Meanwhile, put the chocolate, butter and water in a large bowl, and heat over a saucepan of simmering water. Do not stir. When everything is melted, stir gently together.
Using a metal spoon, gently but thoroughly fold the cream mixture into the chocolate mixture. Stir in the almonds and flour. Pour into the tin and bake for 20mn.
When cooked, remove from the tin and place on a cooling rack.
Dust with icing sugar or cocoa.
The cake will sink when it comes out of the oven. It is meant to be slightly gooey in the middle with a crunchy crust on the outside, quite like a good chocolate brownie !
