Be really careful, it's not a « fromage frais » because it's the exact opposit !!
A « fromage fait » is also a « fromage de caractère ». If someone talks about a fromage using « caractère » it only means « strong ».
If you're not familiar with cheese, do not start with a "fromage fait"...
You can easily recognize a "fromage fait" because it has a brown or dark grey crust. It looks very dry, it's not smooth at all.
On the otherhand, a « fromage de vache fait » ( a cow's milk cheese) becomes very runny. Like this St Félicien :
