There are many kinds of blue cheese.
Here is a slice of "fourme d'ambert". It's a soft blue cheese with a smooth taste.
Blue cheese can be made from cow's milk or ship's milk (lait de brebis). So if you want
a soft taste, choose a "bleu au lait de vache", it's not so strong.
O this photo, the cheese on the righet is "lait de vache" whereas the left one is "lait de brebis".
