Here are "petits pois" primeurs. You can find "petits pois" all year long in can "en conserve". But when it's time for the "primeurs", don't miss them.

How can I prepare them ?
You must "écosser" the petits pois. "écosser" means remove the "cosse" this long and thin green envelop that looks like a green bean.

What can I do with all these "cosse" ?
Nothing sorry, we don't eat them.
How can I cook them ?
You can cook the "petits pois" in a frying pan. Sauté onion, then add the petits pois, add a cup of water, salt and pepper. Cover and cook for 15 minutes at least. Add more water if needed.
You can also add "lardons" when you cook the onion. In this case, you don't need to pour
oil in the frying pan, the melted fat of "lardons" is enough.
You can also enjoy your "petits pois" in a jardinière de légumes.
Where can I find them ?
It's better to go to anopen market. If you go to a
supermarket, you might find some, but it's not sure and they migt be not so fresh.
