When you eat a piece of cheese, there's often a thin crust "croûte".
If you want, you can eat it, if you don't think it's a good idea, remove this croûte :
Goat's milk cheese has no crust in general.
You can remove this "croûte" even in a restaurant or when you are invited,it's not unpolite as long as you only use your knife.
You should not eat your cheese with your fingers. Cut a small piece with your knife, pick this piece of cheese and put it on a piece of bread.
You can touch the bread with your fingers but not the cheese.
