How to cook them ?
In a pan, heat 1 tablespoon of oil, cook the "noix de St Jacques" a few minutes.
Pour in the pan 2 tablespoons of strong alcohol (Cognac, Armagnac), cook for two minutes more.
If you want, add 1 tablespoon of "crème fraîche" (cream). Pepper to taste.
